All tea comes from the same plant, the Camellia sinensis. Whether a tea leaf becomes a Black, Green, White or Oolong tea depends entirely on how it is processed after it has been picked.

 

Black tea undergoes a complex fermentation process while Green tea is not fermented (or oxidised - exposed to air) at all. Oolong teas fall somewhere in between, being semi fermented.
